Happy Earth Day!

Did you know that if each of us ate just one meal a week made from locally and organically raised meats and/or produce, we could reduce oil consumption by over 1.1 million barrels of oil every week? That’s not gallons, but barrels. The average "fresh" food item on our plates travels 1,500 miles to get there. Buying locally produced food eliminates the need for all that fuel-guzzling transportation. Lets face it, you can’t get more local than your own backyard!

This is my first year attempting to start seedlings inside for our soon to be vegetable garden. We have started seeds for cucumbers, spinach, lettuce, watermelon, beans, peas and carrots. There is a certain joy, that comes as I rush to my window sill each day and see a teeny little sprout of green. Like a child I think "I did that! I grew something!"

Spinach!

And Lettuce!

And beans...oh my!

If you find that tackling a garden is too time consuming for you or it's just not for you. Check out your local farmers market and buy closer to home. Protect and invest in our earth for us and future generations :)
